lunch on the go in many circumstances IS a taco? I mean, other than spoiled Americans.

You want them to be authentic and not like Chipotle… until you want them to be inauthentic and like Chipotle.

Offering simple, cut out dishes with few options means they have less expenses. Most menus could be pared down in the internet if the business, but people like more choice than they actually need.

I’m sorry but that’s really annoying. An Authentic Taqueria is an authentic Taqueria, which means they don’t do these bowls that chipotle, and other American Tex-Mex restaurants might do. If you’re not feeling like eating a tortilla, dump the meat out on a tray, or order a bunch of side dishes and arrange them on your own. Don’t try and bastardize the authenticity of a real Taqueria.

they might not have a bowl to serve it in, especially for takeout. But I don't think there's a problem with asking them if you can order a side of rice and beans with salsa and the protein of your choice. They might not have it programmed into their system so they might not want to do it if it's not clear what to charge you. But you can ask! Otherwise, order what you like and throw away the tortilla or use it for a different recipe. It's not rude to ask, but if they decline that's not rude either.
