I'm greek so Easter desserts are Tsoureki and Koulourakia, served with coffee.

We bake lamb cake! We found my mothers mold from the 1950s when visiting her one year so she gave it to us and now my daughter requests it.

For OP, I was going to suggest a jelly roll, which you can fill with jam and whipped cream or a lemon curd. It’s lovely and light and less work than many of the options posted.

Strawberry glacé pie or lemon schaum torte (essentially a pavlova w lemon curd and whipped cream) or lemon cake pudding
