Very low carb.


It's fine for a meal though. Kids aren't going to waste away with one filling, but low carb meal.

Roasted sweet potatoes.
Korean japchae noodles seasoned with sesame and soy and sauteed with baby spinach and sesame seeds.
Corn, can be frozen corn this time of year.

Or sometimes when we have a low carb dinner we have a high carb dessert like cake or crepes. Or popcorn, which is a whole grain!

It's not really twice the work as you would have to chop up everything anyway. A lot of high heat and stirring but not that hard to have 2 pans going at the same time.

My kinda picky don’t eat a lot of vegetables kids happily eat it, so I would like to keep them eating it.

I'd want real rice. If you want something else that's also asian inspired, I guess dumplings or egg rolls have some carbs, but none are really heavy on the carbs. I'd probably have a bunch of ice cream afterwards because cauliflower rice wouldn't fill me up.

Agree with dumplings, egg rolls and savory Korean jeon pancakes. Could add wonton or egg drop soup too. Or go all out carbs and add lo mein noodles.
