We are trying to do less animal periwinkle. I look for for plant based recipes. Basically legumes and vegetables whole grains and generally cheap fish (sardines and mackerel) are best (though not tastiest). I’ll do veggie curries with yogurt; Asian stir fries but also I like the cookbook Mediterranean Light (Marcella hazan).
We do broccoli chickpea whole wheat pasta a lot (add hot pepper and raisins). I sometimes mix my pasta with with spaghetti squash.
Bean soups (white bean with rosemary)
Lots of grilled and roasted veggies. Gazpacho season is coming and I can’t wait.
