I posted a list of things my kids like above. My kids are from a really stereotypical American background with ancestors from a variety of European countries, none of whom arrived since WW2.

I make a lentil salad with green lentils, tomatoes, cucumbers, feta, red onions, and lemon olive oil dressing.

I don’t mix the salad, though I serve the lentils, tomatoes, cucumbers, etc. in separate bowls, and let my kids serve themselves. They eat more lentils when it’s not a mixed salad.

What a bizarre statement. Immigrants are Americans. Italian-American and Greek-Americans have been eating lentils in the US for over 100 years at this point.

Some ways our 5 year old happily eats lentils:

Chili with lentils
Lentil sloppy joes
Mujedderah
Veggie tacos with lentils
Veggie shepherds pie
Nachos
Spaghetti squash bowls (halved and roasted - topped with chili lentils and cheese)

I throw them into a lot of soups/stews. No one notices lol. Especially if there's a rather thick sauce, or a curry. I have a very adventurous eating family in general. DD was ridiculously excited when she started ordering off the adult menu because the kids ones rarely had roasted salmon, crab cakes or scallops...

there are thousands of ways to prepare lentils. ask any indian cook. yes, you would need to like indian food and no, it's not always spicy.

I just saw the wP article and I do like lentils and don't eat them enough. What's the best way to cook them--do you just boil and how long can they keep in the fridge?

also, can the PP's share a good lentil sloppy joe recipe? I'm a vegetarian and this sounds wonderful!

Red lentils cook down softer and quicker than green or brown, and thus are easier to hide in ground beef, sauce, etc.
my kids are not the problem, they love lentils. I have to hide them from DH 🙄
