For future gf recipe seekers: +1 on fruit crisp. I mix peaches (frozen works) with the berries; just use gluten free oats and almond flour etc.

I wouldn’t trust amaretto cookies unless I read the ingredients list.
For an ice cream fancier addition you could roll ice cream in coconut or nuts and freeze the balls, serve with chocolate. My celiac relative would eat your ice cream.

Good call on checking about freezer space. Yes, all GF folks are on the diet for reasons other than allergy/ celiac and can eat GF food made at someone’s home.
