Cook Once Dinner Fix by Cassy Joy Garcia.

I love the fact that you cook enough protein for two meals, and then make completely different meals from each portion of protein, so you're not eating boring leftovers. So you might cook a pork shoulder for carnitas, and then use the leftovers to make a stir-fry.

The recipes also come with plenty of substitutions for allergies and different diets, and different cooking options.

Great book for everyday dinners, and I have a whole bookcase full of cookbooks.

+1 Anything Melissa Clark, except I always cut the salt in half - find her too generous with salt for some reason. But I love the flavors.

Have also really been enjoying Everyday French Cooking by Wini Moranville and Salad Freak by Jess Damuck, which is way more than salads - lots of cooked veg or veg and protein combos.

If you want to go the Barefoot Contessa route, check out https://storeboughtisfineblog.wordpress.com - Trent, the blogger, cooked his way through literally every recipe Ina Garten ever shared, in cookbooks, online, etc.

In the blog he links to all that are available online, shares his notes, thoughts, tips, best-of lists, you name it.

Also - Ina herself endorses him - she has cooked live with him online - so you know you can trust his opinions. He spent 6+ years cooking through her recipes and documented it all.
