Would walks/hikes be more fun if you did a scavenger hunt or bingo game? Have a list of things you’re trying to find and winner gets to pick what movie to watch or something.
Or what about a family pass to a place like zava zone of sky zone? I had a friend in your shoes who did that as a bonding thing with his son and it helped them both get in better shape. Climbing gym is similar. Rec swimming at a county pool or ymca can also be good. Bring a friend and she can play while you do a few laps.
And/or just make her do something with you each day - her choice, walk, yoga, dancing, tennis, you tube video. If you give her a couple choices and just make it a non-negotiable nightly routine resistance (from you and her), resistance will wane over time.

Our son loves row machine. We ended getting three mid level ones instead of one nice one. We row together and but something on big screen in basement sometimes it is just a river row video, other times in a movie. Kills the time and we all get exercise. DH rows mid day while making calls and the results are amazing.

Might she like rock climbing? You could try bouldering at a gym, so it's climate controlled, she doesn't need to wear a harness, and there are thick mats to fall onto. It's a good full body workout and helps with motor planning.
If she's interested in getting a dog I think that's a great way to add in more walking.

Agree with Tiktok dances. Learn a dance each week together. Dance for 30 minutes straight each day, and those calories will burn.
Have you considered allstar cheer? It's a lot of tumbling, and hard work, but it's fun too. They take all levels, sizes, and abilities.
