But I will add, people may turn up their noses at pigs-in-blankets, but they get DEVOURED. Easy to make, or you can usually buy them premade in the freezer section.

Not everyone on this board is from the DC metro area. I’m Canadian, myself. I imagine it might be BBQ weather is some of the Deep South right now.

Appetizer implies easy-to-eat, no utensils needed, can easily fit on a small plate, not messy.
Couscous is opposite of that.
And OP said this is a bbq not a Mediterranean themed sit-down dinner party.

Fruit tray is more of a dessert. I'd go with chopped veggies/pita with dip. Nice to have some veggies to eat.

Sausage dip:
2 8oz of cream cheese
2 cans rotel tomatoes and chilies(sp)
1 sausage (like Jimmy Dean) browned
soften cream cheese
In large bowl mix together really well the rotel tomatoes and cream cheese .
Add the warm browned sausage to the cream cheese and tomatoes and mix well.
Cook on 350 for 30 minutes
Serve with tortilla chips.

So... what kind of couscous? Couscous is the grain. If you add couscous grains to herbs, lime juice and diced vegetables to make a salad, it might make it lighter and more appealing than just the huge mound of pasta that it is.
But please remind him that couscous is not an appetizer. He needs to assess whether it's the sort of party where it's OK to not bring what was asked.
