We eat variations on this a lot, can vary meat to use plain ground turkey, beef or pork, can vary cheese, can add chopped veg. I often skip making cups, make night before, put in 8x8 pan, bake in am and cut into squares. Feta is really good in this too. To re-heat egg cups, put 2 on a plate, cover with a damp paper towel and microwave for 30 set at a time until hot. These freeze well and can defrost in fridge overnight and come to room temp on countertop. Also good for lunch/snack.

Breakfast does not have to be breakfast food, can be leftovers too. My kids sometimes like leftover homemade meatballs dipped in pesto, marinara, etc., leftover stir fry, etc. And having a bunch of hardboiled eggs is always handy, they can be briefly re-heated too. One other egg dish we eat a lot is shakshuka. I use Rao sauce as a base and add spices over the eggs.
