You literally pour boiling water in it to make it. It’s not going to be much worse than my canteen I hiked with in scouts with 3 day old water.
Yes, when you make it, it has boiling water. But the heat will dissipate in about 20-30 min. After 8 hours, mold and bacteria that are in the air will land and start to grow feeding off the organic components and nutrients that were in the tea leaves and are now in the water. If you leave it out overnight, it may have mold and bacteria. If might not, but it might. You can avoid this by either covering the cup or refrigerating it. Both of these significantly decrease the changes that mold and bacteria will grow in your teacup.
The water in your canteen is less likely to have a problem. First, the canteen is closed. Second, there are no additives in the water that will attract or feed bacteria or mold. There is in tea. So the two are not analagous situations.
