The little crunchy bits of the tyrosine amino acids produced by aging Reggiano are sublime.

They taste nothing alike, or at least they shouldn’t. Romano is a sheep’s milk cheese.

They taste very similar. If you have a sensitive palate, you will notice a difference, but most won’t. We grew up with Romano and I prefer it, but they’re pretty much interchangeable.

Pecorino is saltier and has a tangy/sharp flavor profile ftom the sheep’s milk. Reggiano has a milder, slightly nutty profile. Don’t confuse “Parmesan” with DOP Reggiano.

This is what I buy as a default. I like it, don't know if it is the best.

These chunks are the real deal. They come from Parma and are the authentic wheels of cheese produced there. So good! How can a hard cheese be so cream6 and nutty?

Have you tried Calvert-Woodley? I haven't tried their parm specifically, but they know their cheese.

This. You can see the wheels there. They also have more than one kind sometimes. They will also sell you a tub of rinds to throw in sauces and soups.
