That's what we had for dinner tonight. We went out for the afternoon and got home at normal dinner time. My wife and I thought of getting takeout, but my kids wanted the traditional Black Friday turkey pot pie. So I made it and we had a late dinner. The kids said it was worth waiting for.

My mother always made turkey a la king (which is essentially the filling of turkey pot pie served over toast). I continued the tradition, but put the filling into a pie shell instead.

I like just repeating the thanksgiving meal the day after. As the host and cook, I am usually so focused on hosting that I don’t really taste the food. Lunch the day after is when I put some of everything on my plate and really think about what it tastes like. One more repeat tomorrow, and that will be the end of the leftovers, and I will be ready for new tastes.

I can't remember how long we cooked them for, but last year we wrapped turkey, stuffing, mashed potatoes and gravy in crescent rolls and they were delicious. Also, thanksgiving quesadillas and open face sandwiches. I also love making some frozen fries and topping them with gravy and turkey pieces.

This morning we made oven-baked french toast with the leftover dinner rolls.

Leftover stuffing, fried in a pan with spinach, topped with two fried eggs (lunch today).

For dinner we just had plates of reheated turkey dinner.

Sausage stuffing balls with gravy - probably dinner tomorrow night.

Mashed potato patties with bacon bits, chopped broccoli and shredded cheese, fried in butter - serve with the stuffing balls.

My family made turkey barley soup growing up. It’s still something I enjoy. It’s a similar flavor profile to turkey noodle, but I like the bite of the barley. I suppose you could use leftover turkey for tortilla soup though, if you’re looking for a completely different taste.

I haven’t had turkey tetrazzini in 30 years. I may need to make that with my leftovers. My grandma liked to turn leftover turkey into turkey salad — chicken salad, but with turkey. It was so good.
