I wish it wasn't such a PITA to peel and chop butternut squash.

If you microwave the squash for a few minutes, it’s easier to peel. Poke with a fork first.

A version of this is my go to. I use dried cranberries instead of the jam. Also top with honey before baking.

I just made pulled BBQ chicken for a work party.

One Costco sized pack of 8 chicken breasts
One Costco sized bottle of Sweet Baby Rays

Layer sauce and chicken breasts in the crockpot and cook on high for 6.5-7 hrs. When tender, shred the chicken and leave in crockpot on warm for 30m.

Served with buns, coleslaw, and pickles

I took baked pear slices and prosciutto, drizzled with balsamic vinegar, to a potluck
last weekend. They were rapidly devoured and highly complimented.

I read about those meatballs for years and thought it sounded totally disgusting. Then one year I went to a potluck and somebody brought a Crock-Pot of the most amazingly delicious meatballs. I was chatting with the person who brought them and.... You guessed it, grape jelly and chili sauce. Never would have guessed.

Anyway, other ideas...
Squash soup, bring small disposable bowls and spoons
Roasted brussel sprouts with pecans and dried cranberries
Spinach salad with Asian pears, pomegranate seeds, and vinaigrette dressing
Pigs in blankets
