After my wife started growing basil in her garden and we got large crops of basil leaves, this has become one of the family favorites and a regular in our meal rotation. It is 5 ingredients (pork chops, basil, garlic, lemon juice, olive oil) plus salt and pepper, so technically 7, but I think it still counts and is trivially simple to make.

Put the ingredients in a mini food processor (I have a 2 cup processor that works great for this), blend, rub on the pork chops and you can cook on the grill, in a skillet or in the oven. I usually do the oven on a tray with a cooking rack on it. The one simple but time consuming thing that I add that I think makes a world of difference is I brine the pork chops, which keeps them very moist. Just put salt in boiling water to dissolve, add cold water, put in the pork chops and let them sit 2-4 hours in the fridge before the rub and cooking.

Lentil soup.

-1 onion, 2 carrots, 2 celery, chopped and sautéed.
-red lentils
-cumin (cook a bit with the vegetables before adding water)
-water
-salt pepper to taste

Lentils and rice
- sautéed an onion in moderate amount of olive oil and salt
-add green lentils and rice, cover with water and cook

We eat with a big dollop of plain yogurt on top

I’ve been making these for years - with rice & veggie. Yum for all.

Those look good. Do you think the bread crumbs are a must? Perhaps I could sub an egg as a binder?
