We don't need to hear from business owners or salespeople about James. We all know he treats people terribly. There's no need for more stories about it, or the details. If it were Tom Hanks or Obama or someone, who we all figured are really nice to everyone, THEN that would be a story. But James Corden treating people badly? So what. SSDD
From what I know about Balthazar, it is not hurting for business. And this story attracted attention exactly because James Corden seems nice and was the last person you would expect to be mean and rude to people in restaurants.
I don't think it's mean and rude to expect the food you get to be what you ordered. He sent it back and it came back incorrect -- AGAIN?
NP: Of course it's okay to send something back when it's not what you ordered, but you need to do it nicely. No yelling, no insulting anyone, no demanding freebies, etc.
+1 He threw a tantrum at the server because there was a speck of egg white in his wife’s egg yolk (WTF?) omelet.

You must be from fly -over or some irrelevant southern state . Add to that your apparent penchant for conspiracies. Had you bothered to know what kind of restaurant balthazar is, you wouldn't be peddling your half baked theory about the owner needing publicity .

They should have offered him the meal and drinks on the house right then and there. Who expects to wait to eat while their meal is prepared not once, not twice but THREE TIMES??? Come on. He was probably hangry.
