+1. I don't usually buy soft cheeses, but for hard cheeses, I am not even thinking - just cut the moldy piece off and keep going.


Same here.

But what would you do about a block of feta? That’s my current quandary.

I cut it off and either use it or add it to my bag of random cheeses in the freezer which we will eventually turn into a cheese spread (a la Jacques Pepin).

Soft cheese, toss it. Hard cheese, cut the mold off and put it in a new cheese paper.

Uh-oh, I hope none of the kids ate it like that. I think they would know better but sometimes, who know... I better cut it off now while I'm thinking about it. You can cut it off cheddar, right? (Googles on phone) Okay, I'm good. I should try to make something with that for dinner tonight.

If it’s Parmesan i just cut the moldy bits off. For soft cheeses, I toss.

Soft like Philadelphia cream cheese, the “wet” mozzarella, … cheddar is hard cheese.
