I would add ground beef to the taco soup, and have shredded lettuce, shredded cheese, salsa, and hot sauce available along with the tortilla chips. It's a filling meal. You can also use chicken or ground deer instead of ground beef. My kids grew up eating ground deer, they never complained. Better than starvation.

1 package taco seasoning
2 bags steamable vegetables that include corn and peppers
1 can black beans, drained
4 cups water

Cook ground beef, then add taco seasoning according to package, set aside. Steam veggies in microwave according to package. Add oil to pan and sauté rice packet one minute, stirring. Add veggies and sauté another minute. Add in ground beef and beans. Add 4 cup water, bring to boil then reduce to simmer for 20 minutes. Serve topped with cheese or sour cream.

Will do. I’m going to use low-sodium taco seasoning and beans as I believe the rice pouch probably has more than enough, and I’m serving with the suggested quesadillas.

Verdict is in! It was a win!

For a cheap, quick and easy meal, it was perfect. I will definitely make it throughout the fall. I’d recommend having extra taco seasoning on hand to season the pot to taste; I had to add a cup of water and had to concoct my own. Ended up using a bag of frozen corn and a bag of frozen peppers and onion, which was perfect.

We make potato wedges to go with taco soup. They are like a riff on Spanish potato tapas.
