I make pork in the crockpot (cooked with beer, water, garlic, cumin and oregano until falling apart) shred it, then freeze covered with the broth from the crockpot (which prevents freezer burn). Then when we want it, I fry it in olive oil with onions and more garlic to use as carnitas. It’s so good when the edges get crispy!
Works for shredded chicken too. I usually don’t like frozen cooked meat it if you freeze it in the broth it’s cooked in, it seems to help a lot with avoiding that freezer flavor.

Nanny again-

Just wanted to post some recipes. I usually double the bolognese recipe! I know cooking it for 4 hours sounds like a lot, but I just put it on the stove and walk away. The kids tell me my recipe is better than the bolognese at Gusto (a now closed restaurant in LA). High praise!!

I freeze flat in ziplocks, to save room in the freezer.

I like to double or even quadruple these recipes. For the sauces, I freeze in individual portions. Some of the sauces are time consuming, but if you make 2-4x the servings and freeze it’s worth it to have nice homemade sauces

Mandu. Just stick meatball (maybe add tofu and some vegetables in the mix) in there. Do Asian seasoning instead of Italian if you want, but it’s option. Good to keep in freezer for pan fried meal or snack, or to put in hot soup.
