I do her recipe but half cottage cheese/ half ricotta because I like the taste and texture better.


Different grandmother, but same recipe. Full cottage cheese and no ricotta. I thought it was the norm until I was in my mid 20s.

Cottage cheese gives the lasagna more depth.

1/2 cottage cheese
1/2 ricotta
2 eggs
fresh basil
fresh garlic
sea salt
2 cups of mozzarella

Well, the truth is that authentic lasagna doesn't use ricotta - it uses a bechamel sauce.

That said! I think you can just completely sub out cottage cheese for the ricotta (I'd use the small curd with at least some fat) + 1 egg, parmesan, salt, pepper, and herbs.

I have used it in place of ricotta. Mainly because my kids seem really offended by ricotta. I grew up with cottage cheese in lasagna, so I think of it as normal. Clearly, we are not Italian haha.

I have blended it up, like other mentioned. And just mixed it in. The key is to get the 4%, not the skim. The skim is a bit watery.

+1 cottage cheese, egg, and herbs is what my mom did also. Now I want to try it, I loved it as a kid.

Is cottage cheese really lower calorie? I always assumed people used it because they couldn't get ricotta. I grew up in TX, and we could not get ricotta at our local grocery store.

I use the cottage cheese as is. No running through a food processor. I started doing it because my mother did it. And she did it because it’s fewer calories. People love my lasagna.
