I think I saw this on the menu at Chasin Tails.

You've seen buying a drink for the staff as a line item on a menu many times? Where?

NP, but I saw this recently at a brewery in Moline IL - something like - "buy a round of beers for the staff - $X" I assume they just take that money and split it among the staff vs giving them all beers though....

And to show I'm not just making that up, you can check out the online menu for Bent River Brewing in Moline. It's actually "buy a round of beers for the kitchen - $12". I'm sure they are not the only place that does this, although I have not personally seen it elsewhere.

There was a place in Boston (Cambridge actually) where you could buy a 6-pack of PBR tall boys for the kitchen staff. They loved it, all of them, and I know this for certain because I was friends with them.

I’ve heard it’s nice to offer the sommelier a small glass if he recommends an amazing wine off the wine list. But I’ve never seen it. We don’t usually spend more than $100 for a bottle.

I have been fortunate to go with him to some of the best places in town and the chef always came out to our table, we never saw a menu, everything was paired with the wines and simply brought to us and we often sat in special areas. One time, at a noted place, I thought I was being escorted out of the back of the restaurant only to be seated in a secret really table right by the kitchen. Didn’t even know the location existed and I had been to the restaurant 10 times before. He is treated in a very special way.

You're friends with Kavanaugh?

I don’t believe kitchen gets tipped out in most places. Although it’s been decades since I worked in the kitchen.

Ha. So not a good take it made me laugh. You dont go to nice restaurants or drink good wine. Only a fool looks at the prices on wine lists. Such things are as irrelevant to this discussion as the food “selections” on the menu stiffs like you are forced to choose from. When the 47 Cheval Blanc is opened, you won’t be around!
