I completely lose interest in eating this time every year and I don’t even mind heat but it just makes me not even want to eat.

Gazpacho with a baguette and Spanish cheese and olives

Hummus and pita with lettuce, tomato, feta and cucumber

Cold cucumber dill soup with dill and a sandwich

Egg salad sandwich

Greek pasta salad

Kale and white bean salad

And to the PP- I don’t have central air and there’s nowhere to put a window unit in my kitchen.

I plug in the instant pot on the deck so the steam release does not happen in my kitchen.

Please share your air fryer salmon recipe
You can use whatever seasoning or marinade for the salmon from any recipe. Just replace the cooking portion of the recipe with temp & time for air fryer.

1. Preheat air fryer to 400.
2. Season salmon.
3. Air fry for 7-9 minutes (depends on how thick the cut is).

I typically prefer a cream sauce pasta, or something with sausage, but this is amazing when tomatoes are in season. Also the leftovers are fab cold https://www.foodandwine.com/recipes/spaghetti-tomatoes-black-olives-garlic-and-feta-cheese

Let’s see. The past 3 nights we had:

grilled salmon (dry rub) with Caesar salad and a baguette
Sweet and spicy chicken tacos, chicken made in slow cooker, topped with Cole slaw and avocados
Grilled turkey burgers with tzazizki, with sides of grilled peppers and cold orzo salad with spinach, tomatoes and feta

Cold blueberry soup

Yogurt parfait for dinner (granola, Greek yogurt and fruit. I sometimes freeze fresh raspberries and crumble them in. Drizzle with honey.

Garden rolls in rice paper wraps plus tamago and edamame (Japanese takeout)

Deviled eggs

Mango sticky rice for dessert (ok, for dinner, whatevs)

I live in AZ so it's hot for months. Tonight we had curried chicken salad. It was a bed of mixed greens with brown rice, halved grapes, raisins, cucumbers, carrots, walnuts, pita croutons, chicken marinated in a curry-yogurt sauce, and all topped with a light lemon vinaigrette.

This is what I’m doing too. Instant pot or crock pot to avoid turning the stove on our standing outside at the grill.

Grilled steak, sliced thin, served over a bed of romaine lettuce with cherry tomatoes, celery, and cucumber. A light vinaigrette or creamy dressing drizzled over the top.

Sushi. Takeout, of course, or we pick up sushi-grade fish and other fixings from the local Asian grocery and roll our own.

Grilled salmon, with grilled zucchini (I like a mix of green and yellow zuccs with olive oil, salt & pepper), and spring mesclun mix tossed with olive oil & lemon juice.

Grilled hot dogs and store-bought potato salad. Cause it's summer.
