Is the host diabetic by any chance and looking for good desserts they can enjoy?

I was invited to a potluck where two out of the twenty guests were diabetic and I got the assignment of a sugar free dessert. I was stymied, in large part because I don’t care for the taste of artificial sweeteners and so I have never cooked with them. I was a little confused as to why the guests with diabetes were not the ones who got that assignment since they were more accustomed to dealing with that limitation.

I tried chocolate hummus and it was not good. I wouldn't have high hopes for this one.

Fruit has a lot of sugar/carbs. Not really sure I get the point of this sugar free dessert party. Does fruit count or not? Otherwise its just a bunch of gross sugar substitutes. I think I'd feel a headache coming the night of the party.

I will sometimes make chocolate mousse and raspberry Bavarian. I take wine glasses and put a bed of mousse in, then bury fresh raspberries, blueberries and strawberry pieces into the mousse/Bavarian then cover. It's nice and light and then people get the surprise of the fresh berries. You can make sugar free mousse/Bavarian. People can choose which flavor they take.
