Animal fats can bubble and splatter. I’d rather not have that on my food. It would be less likely to get on the second pan from below.

Adding too, That isn’t the case for everyone. Many people are really not going to care. I just happen to be reactive to dairy. This guest might not.

Typically we cook meat/dairy recipes in separate pans but same oven at home. (My husband is not vegan.)

We did make your own pizzas last time he was here, with vegan cheese, and he put olives on his so I am not worried.
