I often make a huge pot of oatmeal poha. I do a lot of prep beforehand so it doesn't take me much time in the morning. I add quite a bit of veggies and not only we eat it breakfast, but often will pack it for lunch box. My kids love it eat it with tomato ketchup. I eat leftovers with my evening tea.
Hemp hearts, dried mango with chile, baked apples (tastes like pie)

Your blend sounds good!
I always have to throw in a few nuts, which helps me stay full longer.
Blueberries. Fresh are perfect, but frozen are also fine. Warm them up in the microwave, then put the oatmeal on top of them.
Banana, sliced thinly and kind of whipped into the oats in the last couple of minutes of cooking.
Pear with crystallized ginger. This is amazing.

This is almost exactly how I make it for my DS. Except we start with apple cinnamon oatmeal, and add the craisins and walnuts afterwards. A drizzle of cream or half & half for the finishing touch!

Blueberries, chopped walnuts, ground flax seeds, a bit of maple syrup, unsweetened almond milk. Sometimes chopped dried apricots instead of blueberries.
