Something easy, and healthy my kids like is:
ground beef with brown rice, carrots and broccoli. I dice the broccoli and carrots pretty small and cook with the brown rice. Season with some salt. When done, add the cooked and seasoned ground beef. Sometimes I touch it off with a little cream.
