I made eggroll in a bowl for dinner tonight. That was pretty good.

I’m guessing dairy free, then add chicken? We do that too. With gluten free pasta. Because my body is weird.

Tomorrow chicken burgers. Tuesday Trader Joe’s ravioli in pesto. Wednesday pasta bake with Trader Joe’s beefless crumbles. That’s as far as I’ve gotten……..we have a veg with everything I’m just not sure that that is yet. I’ll go to Giant on my lunch break tomorrow.

Sunday - Pork schnitzel, pierogis, cauliflower, fruit salad
Monday - Penne, quick homemade tomato sauce, Italian sausages, green salad
Tuesday - Roasted chicken thighs, couscous, green beans
Wednesday- Bean and cheese tostadas with variety of veggie toppings
Thursday - Pork chops, roasted potato wedges, frozen mixed veggies
Friday we order takeout
Saturday - steak and frozen crab cakes I got BOGO at Safeway, broccoli, mozzarella and tomato salad

I also picked up a big spiral sliced ham for half price this week so need to figure out how to use it. I’m struggling to convert my weekly meal plans to lighter summertime foods. This rainy weather isn’t helping.

Salmon prepared in some way
Sweet potatoes, see above
Hot dogs
Homemade chicken noodle soup (SK)
Tonight is chicken tenders, fried, from the Giant deli case
Broccoli, roasted or grilled- with ricotta on toast, a la SK
Pasta of some kind
Tomatoes and fresh mozzarella and olives in a bread salad
Pizza dough- probably will do individual pies on the grill
Probably quesadillas at some point with leftover black beans

And then my usual raw veggies - I never make actual veggies unless they’re the star of the show (like the broccoli)

I’m impressed by the meal planning evidenced on this site. I maybe have one or at most two meals in mind when I shop, but then just toss in whatever moves me as I walk.

I think we should add how many people were cooking for - to help parse these lists. Me- three tweens/teens and a DH.
