NO: sugar, peppers, eggs, Miracle Whip, relish
For the potatoes, skin-on to maintain some texture and size matters. The chunks need to be substantial, not little tiny cubes.

Definitely needed: potatoes (Yukon gold are my favorite, make sure to adequately salt the cooking water), tons of celery and mayonnaise. If you like red or green pepper, go for it. If you like eggs, go for it. Personally I love eggs in potato salad, but one PP doesn’t. Some people include pickle juice, or sriracha.
