Yes, I would go see your cousins.

They are also very touchy about the subject and got all bent out of shape when I asked if they do weekly testing since they are not vaccinated...I was just curious because they work and have kids in school.
So....I invited them to join us for brunch...since my elderly mother will be with us I told them she would simply sit at opposite end of table. She got all defensive and said "omg....so we're still a threat?" and subsequently declined the invite.
I feel like they should accommodate the fact that we are extra cautious with my elderly mother rather than get all upset.
I know this an explosive topic, but I just needed to vent a little and see what others think
I think "Here we go again...." You do what's best for you. But don't keep crowdsourcing "What would you do?" It's your decision and I'll respect it. Your body. Your choice. Their body. Their choice. Your lunch. Your choice on whom to invite.
It's possible your cousins like you anymore. (Yes, I'm vaccinated and boosted, but I'd be furious if someone were asking me about my health status/practices at this point.)
