How do you manage to grill during the seder?

Let’s think about this. How about grill them ahead of time, and then rewarm in the oven, just like many do for Passover brisket. Or, broil them in the oven. There are several common sense solutions to this.

No thanks. I do not want to think about rewarmed grilled vegetables. I would use for soup or something but not serve for a party.

Whole roasted cauliflower looks really fancy. We are doing this in addition to brisket.

(These say "adapted from" and I don't have the cookbook in front of me to know how much they might have changed up the recipe).

For a similar concept with a fancier presentation, a mushroom Wellington:

If you make the pie crust for the galette vegan or use vegan puff pastry for the Wellington, and use a substitute for butter for the galette, these are parve so can be served with brisket for the omnivores.

NP. That looks absolutely delicious (I love mushrooms!), but pie pastry and the like wouldn’t be kosher for Passover.

Another NP. You can substitute a matzo crust for the pie pastry. There are several recipes on-line that will work. I've used Martha Stewart's recipe substituting melted butter for the melted coconut oil and it's worked fine.
