Lots of ice cream doesn't have corn syrup in it. If the family is ok getting an ice cream cake from a place without a hechsher that could work, otherwise I might suggest just getting different ice creams, sprinkles, chocolate sauce, whipped cream, fruit, etc. and letting people do make your own sundaes. You could put a candle in the birthday kid's. You could even make kosher for passover brownies from a mix and make brownie sundaes.

Macarons? They're made with almonds I believe. You could probably source the shells themselves and then make your own basic buttercream if you're concerned about the filling.

It depends on how kosher for passover it needs to be.

Most kosher bakeries don't bake for passover, so if you need something that is made in a supervised kitchen and marked as kosher for passover, you may need to buy a pre-made cake at a kosher supermarket (It likely won't be iced and may be dry). You can also get a cake mix at a kosher supermarket and make that at home (assuming you've turned over your kitchen for passover).

If the cake doesn't have to be marked as kosher for passover, and kosher style is OK, just get any flourless cake at any bakery. A lot of bakeries make them....not a kosher bakery necessarily. Just whatever is close by to you.

Based on your posts, it sounds like the second options is likely fine. And will be easier for sure.

Religious Jews don’t eat leavened bread products during Passover. It doesn’t have anything to do with gluten.

Most (all?) of the local kosher bakeries don't switch for passover in this area. IMHO, your options are:
* make at home
* get a store-bought passover cake (they will sell them at motis, shaloms, and some local grocery stores). Or costco in wheaton will soon get a few passover cakes (like the 7 layer chocolate cake). Some of the more expensive ones will look very nice, but they are not going to taste good IMHO. Get some candles that say happy birthday
* Call seven mile market in Balitmore and ask them if they do in-house cakes or any of their places will do so and talk with them...then make the trip to Pikesville to pick it up.

I'm the PP that suggested the ice cream cake or the flourless chocolate cake. The above poster posted a solid recipe. The only thing I add is a tsp of vanilla or a Tbs of coffee to bring out more chocolate richness. It is very easy to make and you spend less than 5 minutes in hands-on mixing.

I was also going to suggest Baked by Yael but my instinct is that most kosher bakeries are going to shut down for Passover because it is such a PITA to convert the kitchen for Passover, especially to the standards for the Orthodox.

I will say the butter effects the taste a bit so if you decide to make it parve, choose a non-dairy butter alternative that you like the taste of.

Our daughter's birthday frequently falls during Passover almost every year, and we do not bother with Pesach cakes. They are pretty much all awful - and we are mostly Mizrachi and do not follow corn/rice/nut restrictions. We do fresh berries with cream usually and do a cake after the holiday. Hundreds of years ago, rice flour and wheat flour could easily be confused so the powers that be prohibited both. Not everyone follows the rice restriction today.
