The kimchi rice is nothing special, just trying to clean out the freezer. Here's what I did:
Chop up some well fermented kimchi, caramelize well in butter or olive oil. Add onions and ham if you want. Add riced cauliflower and any other vegetables (I used a frozen veg mix). Throw in some precooked white or brown rice. Mix it all well, add tuna -- I like the kind that comes packed in oil in glass jars. They don't smell fishy or tinny at all. Add whatever seasonings you like - I use
Tamara and fish sauce. Push all of the mix to the edges of the pan, add sesame oil, and then crack an egg or two in the oiled space. Scramble. Mix everything together. I like to add white cheddar cheese chunks sometimes. Spread it all out and let it caramelize. Add sesame seeds, roasted seaweed., top with more fresh kimchi and serve.
