You can freeze a lot of potato recipes. Twice baked potatoes are very quick/easy and freeze so well. Bake a bunch, half them once cool, scoop the insides, season, pipe back in. Freeze.
You could throw them into a curry, chicken pot pie (or soup version), etc.

Same. Or make a huge pot of soup with them and bring to a food pantry.

If they really start to look bad (like you cannot eat them), then cut into sections, bury them in dirt, and harvest in a summer.
