This is what I learned when I got my food Manager's safety license.
The danger in those picnic salads is in the vegetables, usually. It is not the mayo as that stuff is full of preservatives/oil. So potato salad for example is one of the most dangerous.
I also learned that tuna salad at room temperature can sit on a buffet safely up to 6 hours.

Well of course sushi eaters do. But that’s well handled and previously frozen to clear it of parasites.

Chicken, chicken is always more likely to give you food poisoning.
Do you eat raw tuna? Or cook fresh tuna? Not many people do.
