I will have no control over any of the meals, but figure there will always be a salad option, and if I can have some high protein snacks, it should help me through the week.

Adults don’t need snacks. Eat your meals. Either way, 1/2 cup of chickpeas has 28 g carbs and only 6 G protein. Not exactly high protein, low carb. Rx bars have less carbs and twice as much protein (23 carb, 12 protein). But not sure if that is low enough carb for OP
Right. She wants high protein, no/low carb for a week, no meat jerky, no fridge, not even a grocery store.
