My favorites are hot and sour soup and French onion (with cognac, wine and beef broth). I also love that ground beef/V8/mixed vegetable one like this:

Chicken stock in the instant pot.
Strain, remove chicken bones and veggies. Chill overnight. Skim fat.
Reheat with diced carrots celery and onions and add diced chicken breast and acini do Pepe.

Last minute add sliced arugula or kale

I actually really like The Pioneer Woman's Chicken and Dumpling soup. This is what I do with my leftover rotisserie chicken.

I am also a big fan of split pea.

Oh my, This is my favorite.

The 99Ranch in Fairfax has a deli that had this and it was perfect!
It was so cold last weekend and I was really craving this soup.
I went there and they said it has been discontinued

Since then I have been watching youtube videos and will have to learn to make this.

Does anyone know any restaurants that have it?

Cold weather:
Squash with thai curry paste and coconut milk, topped with fried shallots - also good with red lentils
Moroccan carrot and lentil soup
Roasted cauliflower soup with mustard croutons

Pea soup with mint and creme fraiche (Spring)
Gazpacho (summer)

Rasam - hot and sour south Indian tamarind-lentil broth - any time of year

#1 Matzo ball soup

#2 Homemade lasagna soup - its half broth, half crushed tomato. Simmer 30 minutes or so, add cooked lasagna (I break mine up before boiling), then serve with large spoon of ricotta.
