Peanut butter either


When I make it I actually use sunbutter because of an allergy but I don't find it too strong.

instead of rice, quinoa (or half quinoa/half rice)
instead of pasta, chickpea pasta

You get the idea... Just adding in more protein where possible. Rice/quinoa and pasta are go tos because you can add whatever you want on top.


Quinoa is surprisingly high carb.


The DH doesn't have to eat it. I mean to add a bit more protein for the vegetarian and for the carbeaters.

Sounds like her DH won't eat that. I don't have the answer but I'm in a similar situation with a picky DH. I just started cooking for me and the kids and letting DH eat what we do or eat cereal.

rice, steamed broccoli and curry sauce is not enough protein for a growing vegetarian child.

Steam veggie on the side.
