Are they cooked enough or should I turn the oven back on cook them longer? If so, any temp and time recommendations?
I usually cook this meal at 350 for 1.5 hours.

That is way too long and makes it dry. 350 about 20 minutes and you still get crispy skin.. It’s about internal temperature of 165-170. Other ways are to cook in a pan for 5-6 minutes skin down and into the oven at 325 or broil for 2-3 at the end.
