Subject: What are you cooking snow edition
For the past few days…
We made chipotle chicken, black bean, toasted corn red and green enchiladas (half and half). Lots of guacamole.
Chocolate chip cookies (baked a few, saved most in small squares ready to bake).
Hot dogs (did a crisscross cutting technique before grilling in a pan), sauerkraut, oven fries, and crudités. I made mashed potatoes that same night and have been eating them with leftover sauerkraut. So amazing.
Baked apples.
Tonight we made homemade pepperoni pizza and a huge salad.

Soba — chicken liver soup, six minute eggs, roasted mushrooms
On my list:
Pork and cilantro dumplings
Pizza (probably prosciutto and mozzarella, and kale and sausage)

Lasagna

I made “cookies” with almond flour, oats, brown swerve, couple tablespoons white sugar, stevia choc chips etc and they are not good. I’m going to try almond flour banana bread next.
Also made a bake with chickpea pasta and meatballs.
On the list:
Black bean brownies (Food52 just posted a recipe for “Actually Good” black bean brownies)
Cabbage and wild boar casserole
Cauliflower and Parmesan soup
Dry rubbed ribs … I stuck a whole dry rubbed rack in the freezer uncooked. I’m not sure if I should thaw (how?) before cooking in the oven for 6 hours.

Tomorrow is “unstuffed pepper soup” in the crock pot. Ground beef, onions, red/green/orange peppers, crushed tomatoes, diced tomatoes, seasonings. Served with rice (mix in if you want, leave out if you want) and salad.

I didn't have sweet potatoes, so I just doubled the regular potatoes. Served it with rolls. One kid and I voted yes to keep the recipe. One kid and husband voted no to keep the recipe.

I could easily go to the grocery store today, but I'm trying an experiment to hold out until Monday when the kid goes back to school. I actually haven't grocery shopped since just before Christmas (but we were away last weekend). Trying to use up what is in my freezer/pantry.
So far today I've made:
A big breakfast of eggs, bacon and frozen pierogies
A pitcher of black tea
A pitcher of hibiscus tea
Turkey stock (pulled Thanksgiving turkey legs and wings from freezer)
Chocolate-chocolate chip cookie dough that goes in the fridge and will be baked tomorrow - a treat for the kid.
For lunch, DH had leftover baked potato with an individual portion of chili from the freezer
Kid has been eating leftover pizza from the other night
I'm not totally sure what's for dinner tonight, but it probably involves the turkey stock - it could be a soup with lentils and carrots etc.
I pulled out a leg of lamb from the freezer - that will make a good dinner tomorrow.
There's also a pork butt in the freezer, I could get that thawed and do something in the slow cooker.
I have a bag of bones from the Christmas prime rib - will make beef stock tomorrow.
I think I am working out my disappointment with school closing, snow, covid, etc, with all this cooking.
