These are excellent, though I almost double the leeks and cheese. It uses chicken stock but you could probably sub for vegetable if that's an issue:

No grilling allowed?! And you want to serve steak? Do you cook that on a countertop grill or fry it in a pan? And juggling salmon and cooking potatoes at the same time?

Other than scampi, you can try to make shrimp thermidor and cook it in a shallow casserole. For the potatoes, I saw a video once that used boiled baby potatoes and then pressed to make it flat, then sauteed in a mix of honey, soy sauce and sesame seeds, seems like an interesting flavor and would match potatoes well.

That is definitely on the list of possibilities.

Right now I'm thinking crash potatoes with lots of garlic butter, but hasselback done the same way might be posher, so thank you!

Or tiny new potatoes done somehow. Tiny is fancy right?
