Lemony Lima bean soup
Add a bag of frozen baby Limas and a bag of frozen spinach to your fried vegetables. When done add a bit of fresh squeezed lemon juice to each bowl. Great with grilled cheese.

My favorite- tortilla soup.
Sauté onions, carrots, celery, squash and zucchini. Add chicken broth and chicken. Add a can of Rotel or tomatoes with chili peppers near the end. Pour over bowls with tortilla chips. Top with lime, cilantro, shredded Monterey Jack.

Skinnytaste blog has a great cheeseburger soup. I can’t remember if it calls for all these ingredients, but I add them all anyway.
