I don’t think the quality will go anywhere, but when you’re baking at such voluminous scale, it’s not in their interest to make and sell the kind of pastry like one might find at a smaller scale place - like Seylou, Pluma Bluebird, Bread Furst etc. That said, I think JAB/Tatte is doing an amazing job business wise - it’s exciting to see a concept get picked up, funded well, and throughly developed along a strong brand identity (menu, interior design, packaging, marketing, social media etc).
