For me, it would probably be Bill Clinton. I grew up in Chappaqua and met him briefly outside a diner. He signed a copy of the NYTimes I had.
I also had a *very* brief interaction with Paul McCartney when he called out a sign I made for one of his concerts, but I don’t know if it counts. He read my sign aloud and said “very cool!” As a massive Beatles fan, it was a real thrill, though.

Spent an evening hanging out with the Mighty Mighty Bosstones when they played a small show in Greenwich CT about 20 years ago.

Nah, I like others more. But that depends on who you think is impressive. Obama and Oprah are cool, though.
