I think her work as a human rights lawyer probably also made her as big a star in George's eyes as he is to hers. George seems to be really quite dedicated to his human rights work.
As for announcing the ceremony, they probably just figured it would be easier to manage if they knew what to prepare for in terms of publicity.

Lots of socialites like this in NYC and London. They go to Ivy or similar schools, get a law degree at a top 14 school, practice for a short time and then quit to pursue other interests like being a socialite which basically means they dress up and attend fundraisers.
But she did three years at Sidley, worked for a number international tribunals, and now is a barrister at a cutting edge human rights litigation boutique. And she is 36 so hardly seemed like she was just looking for a husband. Being from a rich family probably helped her, but she has a distinguished career on her own merits.
Perhaps she could have had a career. perhaps. But she doesn't.
