I know it's late, but what are people making this week?

I'm making a white bean chicken chili from America's Test Kitchen plus some Mac and cheese for the kids (so that I can make the chili nice and spicy -- they won't eat it even if I keep it mild). Also meal prepping some pumpkin oat muffins for lunches this week (I send them with cream cheese for a treat that is actually pretty healthy -- the kids love them).

What does everyone else have on the stove right now?
