NP here. Yeah, I don't get the concern over how it's prepped. Most Indian dishes are pretty well cooked, so I don't get the concern over preparation. Now, sushi is a different story. You have to worry more about prep with uncooked dishes.
Not to mention, if you are eating Indian vegetarian dishes, it is even less of an issue, because you don't have to worry about meat being undercooked. The vegetables and cheeses are pretty well cooked.
