You CAN use cottage cheese instead of ricotta. But thats crazy! I have a hard time finding ricotta normally so I dont think there is normally much stock in general.
That explains why cottage cheese was out in 3 stores in Arlington I went to Friday and Saturday. Cottage cheese is one of my dieting snacks, and I could find milk, but no Cottage cheese. I thought I was the only person who actually enjoys it plain. People using it for lasagna now makes it make sense.
