Zucchini spinach pancakes for breakfast (toddler life).

Dinner will be beef rib and vegetable quesadillas, with sautéed corn and red peppers, and an arugula salad with cilantro dressing.

Late reply but the one I make most often is spinach, diced apple, dried cranberries, pistachios, a tiny bit of red onion, and crumbled blue cheese with a basic vinaigrette.

I don't cook anymore but my husband made shrimp fettuccini. So good even if pasta aggravates my gluten free self.
I do bake so I made chocolate chip cookies. Another trigger but I ate early.
Tomorrow tilapia oven grilled with loaded baked potatoes. Before the week is out I'm making a cherry cheesecake.
Side note
Sam's Club has a 4 pack of Philly cream cheese on sale for $6.98. For a while cream cheese was hard to find. Get some and freeze it.
