OP the DH wants the change and so he is going to have to make that change happen for his own health. Honestly if he is happy with pasta and sauce from a jar and a side salad he can cook that in 15 mins.

If he is asking for health I would make some suggestions for healthier type meals that he could deal with at first. Say on the weekend he could make a huge salad so its ready to go for dinner. He could even use an hour on the weekend to make a couple of dishes as meal prep and then freeze them. They even sell vegetables cut up now, all you need to do is cook them. There are so many options. There are frozen healthier meals to start with if it's overwhelming. Just change 4 days a week and start from there. Even tell him to get a slow cooker and have recipes that everything is thrown in and left. There are simple ways to start. I'm sure you would have a ton of other simple ideas to start or easy recipes 20mins and less to start with. Cutting out soda and fruit juice etc. Buying fruit and nuts for snacks to have in the house etc.

You can't change others you can only change yourself. He is the one voicing a need to change, so give him some useful tips and recipes. I would do that rather than an intervention.

There are morbidly obese individuals who are obese because they’re lazy. There are obese individuals who are obese because they eat horribly and are lazy. How does anyone know this isn’t the OPs SIL?

Hate to break it to some of the smug people on here, but my kids also eat mostly processed food, lots of pizza, love nuggets, pasta, avoid veggies. And they’re teens and they’re rail thin. This is not as simple as saying that “junk” = obese. This isn’t a black and white issue, much less a moral one.

Even if this is all true how is OP going to help the situation? Not sure why SIL’s DH though it made any sense to get OP involved. I’d stay out of it. It’s up to SIL’s DH to help her or connect her with professionals that can.

OP here. I like this idea. But it only works if all are on board. Including her.

We can't control other people and it does sound like there may be sensory issues and other issues at play. This kind of limited diet is common with autism, for example. BIL should work on his own healthy eating and have a little extra if SIL wants to try it but let her come to it on her own.

I posted in favor of SIL not getting involved and am really not sensitive about my weight. It seems like a patently bad idea for OP to discuss SILs weight with her when SIL has never brought it up to her and they don’t seem to be particularly close.

Her DH should say something and work with her to improve their eating habits. He could actually support her on a daily basis and encourage her to seek professionals who can help.

+1 I'm shocked OP would remotely consider it her place to her intervene. I'm sure the way she oozes nasty judgment would be super helpful and productive.
