If you expect her to come on a trip with you, then you treat her as an equal and her time and travel comforts as important as your own. If you aren't willing to do that, let her stay home and take care of your own children. Frankly, your suggestion is not only rude, but clueless as well as rude.
True spoken words if someone who either never had a nanny or employee or is cruising for a bruising with the nanny she has. Nanny is an employee.

+1000 here’s an extra $800 for spending money would mean more to me than first class seat.

You need a nanny on vacation?
By all means put her in coach. Then realize she’s going to be pretty resentful the entire trip. Putting her in First class with you will change her entire attitude for the trip.

No, but she did have to get a Visa and isn’t an American citizen. Took months.
Could she work with that visa?

if the nanny isn't working on vacation --at all-- and is just tagging along, then it's fine to say you're paying for economy, and if she wants to upgrade to premium or first then it's $x extra for her. (I'm a nanny BTW.)
